2 large bell peppers
2 tbsps. of olive oil

1 cup of mozzarella, shredded

Instructions

1. Preheat oven to 400 F (200 C).
2. Cut peppers in one-half lengthwise, remove seeds and ribs. Drizzle with half of the olive oil and flavor with a pinch of salt and pepper. Bake for 20 minutes.
3. Meanwhile, gear up homemade tomato sauce. Sauté onions in olive oil till translucent, add garlic, stir for about 30 seconds and pour in tomatoes with juice. Flavour with sugar and salt to taste. Cook over medium heat for ten minutes.
4. Combine ricotta with a pinch of common salt and Italian herbs.
5. Fill each pepper with a tablespoon on tomato sauce, and spoon in ricotta. Add another layer of lycopersicon esculentum sauce then sprinkle with mozzarella. Stop with leftover sauce. Render to the oven for 12 minutes.
6. Superlative with parmesan and breadcrumbs and bake for 5 minutes more.
